Ingredients for marinade
3 large oyster mushrooms
1 sheet of nori
Salt/pepper
3 table spoons light soya sauce
2 tbl sp. mayple syrup
1 tbl sp vinegar
2 cups mix lettuce
1 red capsicum chopped
1/2 red onion
1 carrot shaved in strips
1 cup beans of your choice
Cup halved cherry tomatoes
1/2cup sliced cucumber
2 radish sliced thin
1cup yellow Capsicum sliced
1 pear sliced thinly
2 cloves garlic chopped
Dressing
Handful corriander
1cup of soaked cashews
3 tablespoons apple cider vinegar
2 tbl maple syrup
1 tsp garlic powder
1 tsp onion powder
Juice of one lime
Pinch of chilli flakes
Half cup water
Blend all these ingredients in a processor or vitamix till smooth if thick add a little more water
Taste and adjust.
Method
Slice mushroom in rounds as big as scollops
Break up the nori sheet put into a bowl with all marinade ingredients
Add scollops mix through
Leave for 10 min
In a fry pan add a little oil heat with garlic
Take out the scollops from marinade dry a little
Add to pan and brown
Remove set aside.
Add the lettuce to a large bowl then add all ingredients for the salad
Arrange nicely in the bowl.
Add as much dressing as you like
Top with scollops add salt and pepper on top.
