Rainbow salad with herb mayo dressing. This salad has salty-sweet acid flavors blending to make it very tasty.

Mixed lettuce of choice 1 cup

1 carrot thinly sliced into batons

1/2 cucumber sliced

Handful cherry tomatoes halved

1/2 beetroot thinly sliced into batons

1/4 red onion thinly sliced

Little vegan fetta broken through

8 olives pitted halved

Couple strawberries quartered

A mandarine peeled and sliced

A handful of nuts of choice I used chews with maple syrup for a little sweetness.

1/2 avocado chopped.

Herb Dressing

1/4 cup vegan mayo

1/4 cup of mixed fresh herbs finely chopped and mixed through mayo

Add a little drizzle maple syrup

Drizzle of lime juice Mixes well.

Drizzle on top of the salad.

At this point, you can eat now or add some choice of tofu dry-fried in a pan for on top of the salad.
