1 cup chopped carrot, 1 cup chopped celery,1 cup sliced red capsicum,1 cup chopped potatoes, 1cup chopped sweet potatoes. 1 leek sliced, a handful of chopped kale.

1 cup chopped onion. 2 liters of veg stock. 1tbl spoon turmeric. 1tbl spoon garlic powder. 1 tbl onion powder. Heat a drizzle of olive oil in a hot pan and saute all vegetables on low heat with the lid on for a few min or so stirring a few times. Once sauted a little add onion powder, garlic powder, turmeric, and stir for a min. Then add veg stock and bring to boil, turn the heat down to a simmer, cook for about 20 min to 30 min. Keep checking liquid, if need to add a little water. Once everything softened add 2 tablespoons powdered veg stock and a little plant milk. Taste add pepper and salt.
